  • 1 pound fresh strawberries (2 ½ cup)
  • 2 cups apple juice (fresh if you can)
  • 2 cups water
  • 4tbsp agar flakes
  • ⅛ tsp salt


  1. Puree ½ the strawberries and save the best looking ones for garnish.Put aside
  2. Place the juice, agar flakes and water in a saucepan, simmer 5mn or till dissolved (cool about 20mn)
  3. Mix the juice/agar mixture with the strawberry puree
  4. Place in a 8x8 mold and garnish with the fresh strawberries. once the agar has hardened enough


  • Change fruit and juice combination to your liking and according to fruit available in season in your area
  • For more sweetness increase the ratio juice to water or add a few drops of stevia or your favorite sweetener
  • For a creamier consistency replace the juice with almond milk and 1 or 2 Tbsp nut butter (you will need ½ cup of coconut nectar or other sweetener of your choice)
