Chilled Cucumber Avocado Soup Recipe

It is this time of year, the heat is raging...let’s crank up the air conditioner, let’s fill up the freezer with ice cream, keep the beer on ice, bring on the icy cold sugary sodas and drinks...right?

All those practices of our modern world actually have the opposite effect of what we are looking for!

The expression “cool as a cucumber” is a smart one as it gives us a direction as to the foods that are more likely to achieve that result...foods high in water content that can rehydrate us; You saw a few of them above.

  • Eat plenty of cucumbers, celery or zucchini (great source of manganese to protect from free radicals, and sun damage)
  • Indulge in all the leafy greens, also high in water content, they will help keep you hydrated during those dreadful summer days!


  • 2 peeled and seeded organic cucumbers
  • 1 ripe avocado
  • 2 1/2 tbsp of chick pea miso
  • juice of one lime
  • 4 cups of water
  • 1tsp turmeric
  • 1/4 tsp black pepper corn
  • 1 handful fresh dill and mint

Place all ingredients in a blender and make a smooth cream; taste and adjust the flavors to your liking.Serve chilled with some chopped cucumbers and a string of mint.
